Kumquat Marmalade
Any recommendation as to whether this should be on low/medium/high heat? I have tried the recipe twice with excellent results, but it took me far more than the suggested 45 minutes until it jells, actually more than 3 hours I think. But I have cooked it on low heat....

I'm sure not high, too much danger of burning. Was the mixture boiling on low heat? The directions say boil, which to me means pretty active surface activity. As it cooks, it will require less heat to maintain a boil, but I would think you'd want to at least start on medium.

Thanks! It was definitely boiling... I start on high to bring it to boil and then lowered the heat, but it was still definitely boiling. Will give it another try today on medium. We have tons of kumquat on the tree and the marmalade comes out delicious!
