If your on a low carb diet back out of this thread now! Tuscan Bread Salad is also known as Panzanella Salad, and it is To-Die-For.

Unless you have one amazing winter grocer, don't bother making this until you can get your hands on garden ripe tomatoes and fresh basil. Super simple to make-amazing flavor explosion in your mouth!

I found Charmie777's recipe a few years ago and I have never looked back! IMO it's even better when I add thin slices of grilled chicken or steak on top for a whole meal salad.

Really, if you have never had Panzanella salad give it a try and then kick yourself for not trying it earlier-we only live so long!!!

That Panzanella salad is perfect! I was lucky & found some good roma tomatoes so that was supper last night. I was one happy camper...so much so that it will be a repeat last this week. It's easy to do & took me a magic carpet ride right into Summer. Life was great for while last night icon_lol.gif In the Summer months I live mostly on salads & this one makes a regular appearance at the supper table.
You don't know what you have been missing till you try this one.

Yum, that does sound good, although I would have to use veggie bacon.

    Here's a few panzanella salads:

I don't have a specific recipe...We love this stuff! Now I can't wait for summer....
DH loves it with cubed mozza and the bread cubes toasted,
    red onion, yellow pepper, cukes....

We can make a meal out of the salad!
