    Is there a substitute for Cardamom in a recipe? I have a pound cake recipe that calls for this and the stores in my small town do not carry this spice.

    Not really; most spices have their own unique flavors and aromas, and nothing is going to taste the same, although if you don't care about reproducing the flavor you could use other spices that appeal to you and work with the dish. Many spices (and herbs) would work well in pound cake, I used to make one with dried basil in it for a mild anise flavor.

    There is no real substitute.
    However, you could mix together equal parts of cinnamon and nutmeg to make up the total amount of cardamom in your recipe. I have used this myself when out of cardamom....won't duplicate the flavor exactly, but I think it works.

    Thank you for the information about Cardamom. I did us Cinnamon and Nutmeg in the cake. Turned out good!

    I'm glad you liked the sub with cinnamon. Cardamom is a unique spice and one you might enjoy making the acquaintance of. It is often thought of as a scandinavian baking spice but is used as the whole pod in other cuisines.

    As good of an excuse as any to adopt a new bad habit. You can buy spices and herbs in very small amounts (like quarter cup, I think, the small jar) at Penzey's

    Interesting you think of it as Scandinavian, Molly, I always think of it as Indian! I guess the point is that it's really useful in many cuisines and is probably under-utilized.

    Zelda, I'm german (way back) but some Swedes in the area. But yes, Indian and some South African cuisines, too. It's an amazing flavor. I haven't had the adventurousness to try it for the savory stuff but I'm interested. What's your favorite Indian dish that uses Cardamom and what form does it use?

    I keep whole cardamom pods in the pantry, as ground spices go stale so quickly. We do use it to make our own aquavit, which, of course, is Scandinavian and not Indian. I have posted the recipe in the database, Randy's Aquavit.
    Offhand a single specific Indian recipe doesn't spring to mind. I seldom make the same dish twice when I do make Indian food. I'd have to go through my Indian cookbooks, but I do love it added to hot tea. I'll let you know know of any specifics after I've had a chance to go through them.
