    Tuscan Zuppa Toscana

    As I sit here and write this I'll be honest. I've never had Tuscan Zuppa Toscana. I've looked at recipes here as well as other sites and decided on Tuscan Potato Soup (Zuppa Toscana).

    I make an excellent Potato-Cheddar Soup but I don't always want "thick", like stand your spoon up in the bowl thick. I love the idea of Italian sausage and kale gracing my bowl, and I think I will hunt out some pancetta over the bacon.

    So tell me, looking at the recipe I have chosen, what would you do differently, and why?

    I think that recipe looks great.

    I've made this one: Olive Garden Zuppa Toscana

    I use more kale than it calls for, just because it cooks down into almost nothing.
