    Just me today and a day off, which I just found out. Simple and Easy tonight

    Dinner, Tuna salad stuffed tomato; bowl of creamy vegetable soup (freezer stash); baguette topped with fresh mozz for dipping.

    I think I'll add some olives, capers, celery to the tuna

    Eggplant, got two beauties on sale a few days ago, now looking for ideas that aren't Italian, as we made lasagna this week. I do have a spicy eggplant and tofu Chinese-style recipe I love, but I'm still looking around for other ideas.

    Most of you are so ... industrious!! After 40 years of diligent dinner cooking for one dearly beloved husband, I am sooo tired of cooking daily!!

    (That's not counting the times we ate in restaurants. But here, where we have lived for the last 15 years -- coastal village -- we don't have great eating-out places!)

    As a guy was coming to fix a few problems with my gas hob plus 2 ceramic plates + check ovens, I bought frozen stuff from a reliable food market, as I knew I might not be able to use the stove: he was coming late.

    But, yikes, it's never the same as home-cooked!!!

    Lovely-looking fish portions (but it's mashed fish and not decent straight fillets icon_evil.gif ), paprika potato wedges for oven roasting (okay), and a quite nice mix of veggies and sauce for the micro.

    We have great vine-ripened tomatoes from the farm garden, so I sliced a plate-full, with sweet onions and chopped basil.

    Aaaand ... I had my favourite dry rosé wine!

    Goodnight from South Africa!! Went a looong way to do shopping today and I am exhausted! icon_smile.gif

    Decided to make that hot ham & cheese sandwich but use Volpi cold cuts, Cappolla, mortadella, salami & smoked Mozz. That should make me smile icon_lol.gif
