    how could i adapt this recipe for the oven or stove top

    You will need a good sized roasting pan. Brown the pork on all sides, put in the roasting pan with all the rest of the ingredients cover and roast at 300 degrees - 4 or 5 hours, I would think. Check after a few hours to make sure it's not drying out.
