    Mushroom Pate
    I am wondering about the 16 oz of mushrooms in this recipe. Are they fresh mushrooms or canned?

    Fresh. Canned mushrooms are already cooked and usually have a metallic taste that would be unpleasant in this recipe.

    Properly manufactured and stored canned goods should not have a metallic taste. I agree that this was probably made with fresh mushrooms, but there's no reason you can't make it with canned mushrooms if you like them. Just be sure to drain them well first.
