I've made these many, many times, and they are awesome. I even made them and froze them before baking. I just sprayed my mini muffin pan, dropped in the mixture, tossed it in the freezer, then when froze, I put them in a freezer bag, I then took out what I needed and baked them. Nice little thing to have on hand.

My family literally fights over this stuff. It's an old family recipe that my gramma used to make. We put it on everything.... we joke that it's even good on cornflakes.

When we moved down to Cape Canaveral Florida back around 1988, we discovered this really rustic and quaint antiques/herb store in a little shack near the orange groves across the causeway. The lady who owned the place would always tempt us with her hibiscus tea and windmill cookies (which my daughter loved of course). This is an homage to that tea, which you can heat and serve warm or just pour over ice. I could drink this stuff by the pitcher (and have done so!) and I know the color helps give the illusion of drinking juice, but the flavor is right up there too. And being diabetic,I have to tell you that anything that reminds me of juice without actually being juice is a great thing.
