Easy tonight ... working from home with a repair guy here most of the day. Since he is working in the kitchen ... something easy for me.
The extra catfish filet I made Sun night ... turned into a fish sandwich tonight. On a hoagie roll, homemade cajun remoulade, lettuce, tomato, and onion. On the side, sweet potato fries; grapes and peaches.
Turning on the oven is all I plan on doing to cook the fries, lol.

I make a version of poached and fried. Spray a pan lightly with a non stick spray. Then add the egg. MEDIUM heat. Once the white lightly set. Add about 1/4 cup water. Enough to cover the whites, keep on medium low heat. Then ass it cooks, spoon a little water over the top, and keep covered.
You will end up with a delicious, soft almost poached, but not. It is a cross. But, delicious every time.

SC, i made the corned beef over this past weekend, because when you made it I just HAD to go buy one and cook it!
Zeldaz, I've only made the Corned Beef hash one other time, but it is so darn good! Poached egg would be great too, We just like the crunch of a fried egg with this.
I kept some of the cooking stock from when I made the dinner this weekend, and will use it to par boil more carrots and potatoes and then pan fry along with some onion and red pepper, celery...can't wait!

DH won't be home for supper tonight, so it's Sauerkraut and dumplings for this girl. He hates the stuff, and I can't wait for him to be gone at night to make it. I make a small batch and I get 4 eatings out of it. Then I've had my fill of it until he's gone again. LOL He isn't gone in the evening very much anymore, so this is a treat for me.
