PS Just wondering -- do any of you cook your own chickpeas from scratch or do you use canned chickpeas? I recently hit a sale on Goya chickpeas, kidney beans, black beans, etc. I'm well stocked at this point in time. But, I have never cooked them from a dried state -- just curious!
Then I searched for and make this recipe of chef Kate's regularly: How to Make Dried Chickpeas in a Crock-Pot #392583.
Quote:
I use a slightly different recipe, Cooked Chickpeas or Garbanzos (Slow-Cooker) , but I agree that these are so superior to the canned. If I don't need a lot - just one can's worth, I will cook them in the rice cooker after soaking a cup of the dried chicpeas overnight. The rice cooker obviously does it much faster, but it's also carefree - like the slow cooker.
And you can do the same with other kinds of beans. They do freeze very well.
Make sure you buy your beans from a sore that has good turnover.
You've got at least 2 green tags. So, offer it up -- up to two times. I admit I've got heavy demands at work this week and a blizzard/Nor'Easter is heading our way. So! If I don't get back to tag it offer it another time and I will!

Just checking in, looking for recipes and saw your post. I rarely buy canned beans, always use dried or frozen. I'll cook up a bag of dried beans and then put them in ziploc bags in the freezer and pull them out when I need them. They are pretty fool proof....you just have to cook them long enough to get them tender, and if you like, add a bit of bacon or salt pork for seasoning. I grew up on cooked dried beans and cornbread!

Thanks to all of you for sharing your recipes and tips on cooking chickpeas and beans. I plan to stock up on some dried beans and try both the slow cooker and my handy-dandy rice cooker as well. I like the idea of freezing them for future use.
Around these parts, I am known as the "Appliance Queen" and believe me, I have them all. I even have the Ron Popeil Showtime Rotisserie and believe it or not -- it is wonderful! I guess this really shows my age big time!
DH once asked me if I had to choose between my appliances and him, how would I answer. I asked him to let me think about it!
