Truly, there isn't all that much that is good after one week in the fridge. There can be a safety issue also. I try to use it or freeze it within two or three days, when I make something that is not consumed right away.
It would be a better idea to make things you like that freeze well. That way you have some variety and have dinner or lunch ready For example, make a stew or chili - these generally freeze well. But if you make a big pot and keep reheating it, it will not taste very good after a few days.
Chicken breasts and drumsticks can be prepared in quantity, but then freeze whatever the right serving size is for you. Rice and barley freeze well, noodles are best cooked fresh each time you want them. I do not find that potatoes freeze well, so i would cook those fresh each time.
