The Sweet Potato Is A February Food

Nutritionists from the Center for Science in the Public Interests determined that sweet potatoes are the healthiest of all the vegetables by a very large margin.
Sweet potatoes ranked 185 points while the next most nutritious, the potato, scored 184 points. Let’s look at what nutrition is found in the sweet potato.
Points were added for dietary fiber, complex carbohydrates and natural sugar, vitamins A and C, protein, calcium and iron. They were subtracted for fat content especially saturated fat, cholesterol, sodium, added refined sugar and caffeine.
Sweet potatoes have almost double the recommended dietary allowance (RDA) for Vitamin A, more than 40% of the RDA for Vitamin C, 4 times the RDA for beta carotene, and when the skins of the sweet potatoes are eaten there is more fiber than eating oatmeal.
