I need to watch carbs, so have to be careful with potatoes. Tonight's dinner was Chicken Piccata. Served with half potato, stuffed with kale, and topped with roasted red pepper and cheese - carnivore DH walked into the kitchen and stopped in his tracks "Is that dinner? I don't need anything else!". And within my carb budget - though I'd have liked more. And finally DH's Perfect Garden Salad (if you're thinking you've seen this before, you're probably right. We have this salad almost every night, and I photograph it often in the background.)

Lavender Lynn, that is a simply gorgeous photo!! I'd better not let DH see it -- he loves mashed potatoes, especially if a little on the rich side. He'll say, "Can you make that recipe tonight?"

Diane, ditto -- that is a lovely plate of healthy food! I also have to carb-watch, but I cannot resist potatoes in any form ...

Diane -- Deb said it, but I'll repeat it: that is a STUNNING photo of a stuffed potato!!! Oh man, I wish someone would make those for me tonight!

(It's terribly humid and warm, and I hate the idea of cooking dinner!! Leftovers tonight, too! I could eat that potato off my screen! )
