Menu for Week of January 26 through February 1, 2013

Hello menu peeps, happy Saturday!!!! It's a gorgeous drizzly day. I'm sitting here listening to birds cheep and my DH arguing with his brother on the phone. A normal Saturday!
Had a couple of monkey wrenches thrown into the plan last week, but most got made. This coming week is fairly calm, I think. Here's my menu.

Saturday - Spicy Pineapple Pork Chili (Crock Pot) (never got made) - gonna have to try it stove top as my crock pot quit working! With rice and salad
Sunday - Garlic Pesto Chicken and penne - also didn't get made. With salad.
Monday - Caesar Salad with green beans
Tuesday - Meatball Supper Soup - making extra to take to a potluck on Wednesday at work
Wednesday - Busy Night Microwave Wet Burritos with rice and beans
Thursday - Quick & Delicious Pork Chile Verde with salad and tortillas
Friday - stretch room!

Happy Saturday Everyone!
Good week until last night; 2 friends had to work/sick, so cancelled dinner; today, forgot to buy the chicken to smoke. Thought I had some, but wrong cuts. And, tomorrow changed as well. But, I'll just have to mix things up. All recipes are on another site this week, sorry.
C - sounds like a good menu ... I could enjoy a quiet week as well. This may easily change this week. Both Ladies #1 and #2 are out of town on a trip to St. Augustine with their church. So not too much cooking.

Out of town in the am to check on a friends housel but, he left me a fantastic stromboli from his fave restaurant. They are so good! Dinner

Me: Catfish; black eyed peas; sauteed kale with onions, cantaloupe
Lady #4: Only 2 meals this week to be delivered Mon am
Good Old goulash; big salad; home made bread
Chicken and rice (but making my own version of Campbells Soup); fresh mix of melon; and roasted tomatoes

MON ...
Creamy vegetable soup (freezer stash from my CBC dinner); stuffed tomato with tuna salad; white bread (fresh made)

TUES ...
Smoked chicken quarters; sweet potatoes; tomato, corn, and black bean salad or a salsa for the chicken

WED ...
Leftover catfish as a sandwich, w/spicy creole sauce; fries; fruit

THURS ...
Lady #3: Just her. A pot of Beef Barley; home made bread; and a egg salad to make sandwiches
Me: Stuffed pork chop (stuffing is actually from Thanksgiving; I will add dried cranberries and nuts); apple sauce; pan seared broccoli

I have plenty of soup, freezer burritos, pizza, leftover chicken and ham; so, I won't go hungry.

Tuesday: pizza night
Wednesday: Beef and Mushroom Sloppy Joes
Thursday: Split Pea and Parsnip Soup - Crock-Pot

Hi-
We are looking forward to some temps above freezing this week for the first time in too long.
Continuing to keep things simple in the cooking dept.
Sat – spaghetti w/in-laws and friends “passing thru” on their way home from Honduras to Germany
Sun – something similar to Low Fat Sausage Chili with bread
Mon – baked potatoes with artichokes, olives, roasted garlic, goat cheese
Tue – Lemon Butter Salmon With Capers and Asparagus – there is decent frozen asparagus (I wouldn’t use it the way I use fresh, but it’s fine for something like this which I think would be a long time to cook fresh) -- and polenta
Wed – burgers on the grill, brussels sprouts, polenta fries with extra from Tue
Thu – Mole Posole with tamale-type thing
Fri – Red Pepper Risotto using roasted red pepper; made in the rice cooker; I will add some fish to steam at the end
Those last two have been on previous weeks but not gotten made due to leftovers or other things. Might as well recycle! Have a good week! --M

MCV, love the red pepper risotta. And, I am a fan a spuds for dinner. I am having fun stuffing them with just about anything. You can real make an entire dinner with them; add a salad or some fruit and to me it's a great dinner. Nice Menu.
Yes, C ... lighter for me this week. I have some nice soups frozen; so I want to use them up and it a bit lighter a couple of nights a week. Even all my portions, I have cut down a bit. Trying to loose 15 lbs and just really get back in shape. I'm right at the border where I really need to get back up; and not go over.

Hey all. Playing hooky from church this morning. Just too tired. Slept in and am feeling better.
Here is the plan, Mon-Fri:
Monday: Texas Pinto Beans, Collard Greens - It's Good for You!, and cornbread
Tuesday: after school swim meet and pm basketball game (crazy), Garden Tuna Melts and salad
Wednesday: Absolute Best Ever Lasagna, salad, bread, and Turtle Cheesecake
Thursday: Pecan, Rice, and Crawfish Dressing, Cauliflower With Mushrooms and Onions, and salad
Friday: pm basketball game, out to eat after then, Relaxing in Front of the Fire, while we do just that
Work Lunches: Creamy Tomato Crab Soup and Fake Crab Salad Sandwiches (have a craving for crab)
Breakfast: Creamy Grits w/ toast and fruit
Snacks: Frosted Orange Cookies
Drop off meal for friend w/ NHL: Cube Steak W/Gravy, mashed potatoes, Copycat Green Giant Niblets Corn in Butter Sauce and Sweet Potato Pie
