Chicken & Broccoli Casserole... All Time Fav! - what do you mean by "2 medium stocks" broccoli? Also, can I use shredded cheese instead of grated cheese? Thanks.

They mean stalks, or heads of broccoli. I would personally use crowns of broccoli, rather than the whole stalks. You can use cheese in whatever form you prefer, but it will be a different measurement. In a recipe like this that's not very important.
