    Rustic Italian Bread - do I have to use all purpose flour or can I use all bread flour?

    Your bread will actually be better if you use bread flour. It will rise higher and have a better crumb.

    This recipe is written to use either all-purpose or bread flour, not both. They both have their uses, and both will make good bread, but they're not really interchangeable. I would definitely stick with the bread flour for this recipe.

    I always use "King Arthur" Bread Flour when making any kind of bread, and it is the best I have used. icon_biggrin.gif icon_wink.gif

    King Arthur is excellent flour. It has more protein than most other consumer brands, which makes for better bread. But boy, is it expensive!
