Sooo funny!!
First of all, "lamb's offal" IS the dish!! It is cooked long and slow ... Let me not spoil you appetite for the rest of the day, but as coincidence would have it, in the car today after going to buy fresh fish, an old guy on the car radio discussed
baked sheep's head in detail.
I cannot post a recipe because this site's recipe ingredient checker will not understand ...! And as DH hates it, I haven't even cooked offal for years.
You must be right about the tastes of meat in different countries. It DOES depend on what the beasts grazed on. I know most Americans are not fond of lamb -- their explanation so far is that "it has a strong smell/taste."
So I sniffed our lamb meat ... and ours has absolutely no smell!! It is delicious, unless I was sold an old beast -- mutton and not lamb! But stewed mutton is so flavourful ...
Our best-tasting sheep graze on wild, scrubby bushes, which give their meat an almost herbal flavour -- delicious!
Sorry about your UK meat experiences! I have never eaten anything from McDonalds -- our nearest outlet is 20 miles away -- and I am not a fan of burgers, so cannot tell you how it tastes here!
