    Tortellini with a Fresh Tomato Sauce and Baked Zucchini

    asy Dinner

    Zucchini, lightly brushed with olive oil, Italian bread crumbs, then parm and baked.
    Cheese filled spinach tortellini topped with my own fresh tomato sauce.
    A mix of cherry and plum tomatoes, garlic, shallots, red pepper flakes, oregano, white wine and vegetable broth. Fresh basil and parsley.

    No meat needed in this meal!! Love #1 -- it really looks appetizing. Very pretty, those pale green tortellini.

    Store bought tortellini, but they were still really good.
    Thx Zurie ... I really do like NO meat now and then.
    I didn't even peel, but the tomatoes are so fresh and being small, I don't mind the skins on.

    My only regret, I had pre-shredded parm and it doesn't melt as good, I wish I would of had fresh to grate for the zucchini. OH, well. Tasted the same, just presentation is all.

    When I hear folks say they could never eat a vegetarian dinner I just laugh knowing they would jump at a dinner as yummy as yours was.

    Pleasing combination of colors and textures.

    Thx Deb. I really like to eat that way at least 1x per week. It is healthy, but always just lighter. I guess I justify making a cream sauce or pasta dish, if I can offset it by having a bit lighter dinner.
