Newbie "Fry Cook" Poster
I'm wanting to make a recipe from a cook-book dated from 1940, the recipe calls for 1 cake compressed yeast, (I do remember cake yeast from my very young years, watching my mother bake), but when I travel the baking aisles of the grocery store only active dry yeast is available, my question: how many packages of 1/4oz (7g), dry active yeast should I use to equal one cake compressed yeast

I think I have only one store in my area that carries the fresh yeast. If you do find it, it actually freezes quite well.
It won't be in the baking aisle if the store carries it - it will be in the dairy case, perhaps near the refrigerated biscuits, pie crusts, things like that.
I use one envelope of dry yeast for one of the small cubes of fresh yeast. The fresh yeast now seems to come in the rectangular bars only, not in the small square cubes of my youth. For the large bar I would use two envelopes, but I am sure your recipe has the small cube in mind.
