    Leftover Shrimp Stir Fry

    Took my MOJO marinated Shrimp and veggie (zucchini and onion) skewers and added to ... garlic, peppers (red, green, and yellow), mushrooms.

    Sauteed the mushrooms, garlic, red pepper flakes, and peppers in olive oil. Once almost tender, added white wine, chicken broth, and a splash of sherry wine and simmered for 5 minutes until almost reduced. Add the shrimp, zucchini, and onion and simmered until warm.

    Served over rice with fresh cilantro.

    Dessert was frozen peaches that I put up in the summer (GA peaches) with a dollop of vanilla frozen yogurt. Something I normally don't do ... but it was good.

    Great job remaking the shrimp! I never would have thought of that.

    I love leftover remakes ... The reason why I always make extras. It makes dinner so quick at night. Tonight was literally 15 minutes and on the table.

    It may not be an actual recipe. But I hope I can inspire others to take extras and remake them or at least use them up rather than letting them grow mold in the fridge, lol.
