    Caramel Apple Cake With Caramel Topping ( Paula Deen)
    Is the caramel sauce on the top of the cake suppose to get hard when cooling? it isn't so hard that a person can't cut it or chew it, but it cracks when cut.

    I have never made this but looking at the recipe I think the topping is more of a glaze that will stay soft. Think the type of topping you get on a glazed doughnut.

    The topping will be harder after cooling if you boiled it at a rolling boil, as opposed to a gentle boil, even if the cook time was the same! It's a guess as to what the posting chef intended ~
