I just borrowed this book from the library and it has a lot of terrific recipes, The Mexican Slow Cooker, by Deborah Schneider. The cooking times seem to reflect current realities of hotter slow cookers, and don't seem to be overlong.
I'm going try a few of these and hopefully find a few good recipes to post.

I read some reviews which were mostly very positive. The less enthusiastic reviews were due to the fact that the days of plugging in a crock pot and letting it cook for 12 hours are just about over.
Keep us posted on your experiences with the recipes.

Did not check those, but you are right = a lot of people still want something that can go for hours. I am not convinced that that ever really worked, not without turning everything into a nondescript mush...
