    Menu for Week of January 12 through January 18, 2013

    Hi my menu fam!!!!! How is everyone? We're having an unusual cold spell. I love it!!!!
    I have good news!!! I just got a promotion at work!! Totally unexpected, but sometimes things move quickly. I'm transitioning in right now, but that means I went from 32 hours per week and hourly, to 40+ hours on salary.

    The not so good news is most of the time I won't be able to post this thread early. So, count on the thread being started by Saturday morning PST. I really enjoy doing this thread and posting menus, so please allow me a little more time. Thanks all!!!

    And with that, I'm not quite ready with my menu, but please share yours!!!

    Saturday: WW recipe - pulled pork and slaw sandwiches, chips
    Sunday: mac and cheese - new recipe from paper
    Monday: Tuna With Calico Corn Muffins
    Tuesday; pizza
    Wednesday: WW recipe chicken w/lentiles
    Thursday: hotdogs and beans or chipe or salad
    Friday: fish/salad

    C - CONGRATS!! What a great late Xmas present. Wonderful news.

    Nothing too much going on. Trying really hard to use on hand ingredients and veggies from the garden. Teaching a cooking class for 10 coming up which I am looking forward to, but not much else. Been very warm and dry here; could use a little winter like weather; but, it doesn't look like we will get any soon. Had a couple of things planned to eat out; a friends BBQ, but everyone seems to be getting sick; so, lots of rescheduling and re-planning.

    - Beef barley soup; homemade bread; chilled grilled peaches/raspberries
    Me: Corned Beef and 'Cabbage' from my garden, w/potatoes, carrots, onions, creamy horseradish sauce (crock pot); roasted beets

    Lady #1 and #2: Spicy shrimp scampi over rice; lettuce cups w/artichokes, olives, tomatoes, cucumber, feta; garlic bread
    Me: Pulled pork quesadilla; grilled peaches

    Lady #1 and #2 (eating together with guests): Classic pot roast; roasted beets; homemade rolls; kale/mixed grains w/mustard vinaigrette

    Lady #3: Creamy Tomato Bisque; spinach artichoke cheese crostinis
    Me: Reuben sandwich on rye; chips; my refrigerator pickles

    Mornin' all and congrats to you Charmie. We are getting a lot of rain and warmer than normal temps. I threatened to turn on the ac yesterday.

    Here is the plan, Mon-Fri:
    Monday: Chicken Pot Pie, steamed veggies and salad

    Tuesday: HS basketball game night--Ham and Pineapple Pizza w/ salad

    Wednesday: Chicken Linguine,salad, and Sweetheart Fudge Pie

    Thursday: Swim meet--Tuna Burgers, steamed veggie and salad

    Friday: HS basketball game night--eat out, then Long Island Sunset

    Work Lunches: Smoky Clam Chowder, Italian Sausage and Tortellini Soup and Herb Bread (Bread Machine)

    Breakfast: Blueberry Buttermilk Pancakes and Baked Maple Oatmeal

    Snacks: Texas Cheese Dip w/ chips

    Drop off meal for friend w/ NHL: Crock Pot Turkey Breast, Mom's Best Stuffing and Edna's Apple Crumble (Aka. Apple Crisp)

    Gosh, I am just not a fan of Velveeta. But, if you put anyone of those dips that include Velveeta and Rotel in front of me ... I WILL EAT the whole thing rotfl.gif They are so delicious.

    Sunday - Easy 3 Ingredient Pork Loin Roast with mashed potatoes, cooked carrots and salad

    Monday - Ravioli With Balsamic Brown Butter with salad

    Tuesday - Creamy Chicken (Or Turkey) Tetrazzini (didn't get made last week)

    Awesome news Charmie! Later menu posting = not a problem for me these days!

    We had a great warm (almost 70) day which has been a nice gift in the middle of overcast and low 40s.

    Here is my menu...still adjusting to 32 hour work weeks -- but it is getting better.

    Sat – parents in town: steaks on grill, broccoli, noodles, salad
    Sun – over to friends’; bringing big salad
    Mon – bean quesadillas with onions and peppers; possibly with corn
    Tue – Saag Chicken with rice
    Wed – quiche Lorraine (from freezer) with peas
    Thu – frozen fish with made-up stirfry sauce with veggies (carrots, snow peas, baby corn) over leftover rice
    Fri – Mole Posole (but I will make my own sauce from Slow Cooker Chicken Mole) with grits or tamale-type thing

    I am also hoping to try to make injera one of these days, but since I can't count on doing it I don't want to add it to the menu yet.

    I made my own pasta (where's JoeV? icon_smile.gif )

    Filled with prosciutto and thai basil (Thanks TWINIE! icon_wink.gif )

    Made my own bechamel sauce with allspice and black pepper

    WHOO HOO here is what I present to you
