Do I need to use vital wheat gluten in organic spelt bread if so can use anything else. thanks

Vital wheat gluten will help the structure of the bread. The bread will be good without it, but might not rise quite as high or have as nice a crumb.

Xanthan gum can be used. A bag can be purchased for about $6 but it will last you a long time - you don't use much in a loaf of bread. Wheat gluten is a little bit cheaper.
