Boar's Head Provisions Co inc and Boar's Head Brand make Deli meats, cheeses and condiments (mustards, mayos and sauces). No where in their literature or specs did I find any (commercial or retail) salads.

Thats very possible, Steve. It could be Black Bear brand, I totally forgot about them.
My DH works for Boar's Head, I asked him about this and he said they do not make salads.
I think she may be getting an "in store made" macaroni salad and thought it was a Boar's Head product. In any event, the store has to supply a complete ingredient label for the salad when asked. Getting the list of ingredients used would be the first step in duplicating it.
Shoprite is one of many supermarkets that sells Boar's Head products in their deli dept, and I know for a fact that Shoprite makes most of their deli salads fresh on premises from the "corporate recipe book." I also know that there are "regional" differences in how the salads are prepared as well as differences in taste between stores in the same region, because sometimes the deli managers tweak the corporate recipes based on the customer feed back in their store.

You mentioned a "sweetness" in the salad, I wonder if they use some miracle whip in the macaroni salad dressing.....that would add some sweetness as opposed to an all mayo dressing. Could also just be the amount of sugar they add to the dressing or maybe a bit of sweet pickle juice.
