    Sauce for Cordon Bleu

    I picked up a couple of chicken cordon bleu at my butcher shop (not those horrid frozen things, but fresh ones the butcher had assembled, that are ready-to-cook). Any suggestions for a sauce to serve with them?

    What pops into my mind is a quick de glaze of the cooking pan with some white wine and finished with a swirl of butter.

    If it were the frozen kind... Well that is a different story.
