Mac n' Cheese

Mac n' Cheese-it's a comfort food classic.....if done right.

My Mom could not make homemade mac n' cheese that was creamy to save her life. It was always gritty, if you know what i mean. I hate that! When she discovered Kraft Macaroni and Cheese she thought she was saved. I didn't like that either so there was no fighting at the table for who got the last spoonful!
As far as store bought goes, Stouffers has one in the freezer section that's pretty darn good, and if your a baked mac n' cheese person there's a few posted here that are darn close. I found one that I think is better than Stouffers. Creamy Baked Macaroni and Cheese. It's from Cook's Country. I break it down into 4 small foil pans and freeze since it's just the two of us.

If your a stove top mac n' cheese person, or just pinched for time Stove Top Mac-N-Cheese by Alton Brown is really, really good.

It's good to know that freezes well - it's just two of us and all those recipes make too much. This is the one I have been making One Pot Macaroni and Cheese by Consumer Reports

Ha, ha! My mom could make homemade mac and cheese, but the boxed stuff--forget it! She just added the powder plain, no butter or milk (it actually isn't that bad that way).
This is similar to the way she made her homemade dish: Baked Macaroni and Cheddar

every friday night, Moms baked Mac and Cheese, it was soooo good! don't ask me how I got started on this kick but i used to often put Heinz ketchup on it, not alot, just enough.

Creamy Baked Macaroni and Cheese I'm really glad that it freezes well because whats left is going in to the upstairs freezer for 'Dinners For Don' while I am away being waited on hand and foot.

It's in the oven. I put on my big girl panties and bought evaporated milk despite loathing the stuff. I did have to supplement with about 1/2 can of cream as I had not expected to make as much (1/2 recipe and I was going to go with 1/3rd). I did not wimp out on any of the 'heat' - don't laugh - it may not be much to you but............. I made the crumb topping thinking 'this is just ridonkulous' but hey, the guy could use some weight. American cheese is a no go here - it is available only as the plastic wrapped singles for burgers etc. so I peeled and pulled those suckers to make the correct amount.

As soon as I put it in to the oven I started clean up. I licked the pot, I licked the rubber spatula, I licked the wooden spoon and every surface the cheese sauce had come in to contact with.

Tell IB you can't tell there is evaporated milk in it.

I will tell IB you can't taste the evaporated milk but she won't believe me.
