Hello my menu peeps!! Happy New Year!!!! Did everyone have a nice Holiday season? For me New Year's Eve/Day were much more enjoyable than Christmas. Maybe I was just in a better mood. We were just going to spend a quiet evening at home, but then my boys didn't have anywhere to go and neither did some of their friends, so they ended up at my house playing a 5 hour NHL Hockey tournament on the PS3. Quick trip to store and pizza parlor and everyone was happy. Then they all heard I was cooking up a storm for NY Day and they ended up all at my house for dinner!! I sat at the head of the table with 2 long tables end to end filled with young men!! Ages 18 through 55!!! I loved it.
I have sooo much leftovers in the freezer, so I have a pretty loose menu for this coming week, but here it is. Share yours!!
Saturday - Tonkatsu (Japanese Pork Cutlet), Mom's Yakisoba(Japanese fried noodles) and cabbage
Sunday - will be catering a small banquet in 2 weeks, so making most of the meal today to fine tune it. Black Raspberry Glazed Chicken With Wild Rice Stuffing, The Easiest, Bestest Focaccia Bread Ever!! (sorta), Roasted Maple Mustard Green Beans (kinda)
Monday - Carne Asada tacos using leftover Prime Rib, rice and beans
Tuesday - Pork Hoisin Sandwiches using leftover pork
Wednesday - Creamy Chicken (Or Turkey) Tetrazzini using leftover turkey
Thursday - Bunco!!! Not sure what I'll feed the menfolk
Friday - Have a meeting at church so probably will eat out after

Friday: Cranberry Crab Cakes (another recipe using that huge bag of cranberries I bought from Costco) and salad.
Saturday: Tuscan Bean Soup With Arugula in Crockpot
Sunday: ?
Monday: WW shrimp recipe
Tuesday: hotdogs and chips
Wednesday: Turkey Enchilada Casserole Ww
Thursday:WW recipe for shepherd's pie
Friday:fish/salad

C - sounds like it turned out to be a nice NYE and NYD.
This week I really am going to try to use everything on hand; and the goal for 2013, is to try to cut costs. I have soup, sauces, veggies, meat, chicken, turkey and ham. So, that is the goal to use those up first.
C - love you Sun dinner, sounds great. Mon and Tues aren't too shabby either. Just had my cream of chicken/turkey, love it. You're all set.

Me: Chicken tacos w/all the extras - salsa, sour cream, lettuce, tomatoes, avocado, onion, black olives; spicy black beans on the side

Pulled pork; coleslaw; roasted spud salad w/o mayo

Lady #1: Chicken florentine rollups; wild rice; and green beans
Lady #2: Spinach salad topped with bacon; home made bread; fruit
Me: Leftovers; a salad topped with chicken; or ... no meat pasta with sauce from the freezer

Lady #3: TBD
Me: Leftovers, a pulled pork sandwich; slaw; and maybe potato wedges or sweet potato fries; and a tomato cucumber and olive salad

the crab cakes were wonderful! My son questioned the cranberries but you couldn't taste them at all and they are very healthy and just delicious!

Ellie, glad to hear; they sound really good. I bet it adds lots of texture too.
C, my g/f from OH sent me a new spicy apple rub for the pulled pork. You add beer, apple cider and the rub and put in the crock or oven. I'm trying that. It's a single pkg for the roast and she said it is heavenly. I will probably add an onion cut up as well. Should be good. I think I will add some apple jelly to a store bought BBQ sauce along with a little chipotle to spice it up.

Morning everyone. We had the perfect NYE/NYD, too. Pizza, movies, kids and their friends, fireworks at MN, football, and more good food. Loved it.
Here is the plan, Mon-Fri:
Monday: Hot Chicken Salad Casserole, steamed veggies, salad
Tuesday: Basketball game night-- Fiesta Pizza and salad
Wednesday: Cheesy Manicotti, roasted asparagus, salad, and Banana Pudding Trifle
Thursday: after-school swim meet-- Hot Ham Salad Sandwiches, chips, and dill pickle spears
Friday: Basketball game night--eat out, then Pitcher Bloody Mary
Work Lunches: Red Lentil Soup w/ All-Occasion White Bread (Bread Machine) and Wild Rice Chicken Salad
Breakfast: English Muffin Delight
Snacks: Peanut Butter Cookies
Drop off meal for friend w/ NHL: Macaroni Salad, Deviled Eggs, Copycat Olive Garden Minestrone Soup by Todd Wilbur w/ garlic bread
