    Thanks for the warning! I actually got non-homogenized whole milk. It is pasteurized but not ultra. The first one was ultra.... that is almost all that is around these days! and all it did was turn into lemon milk. I seem to remember my nutrition prof in college not really liking the "ultra" process because it changes the chemical properties somehow. It really opened my eyes how prevalent it now is. The milk I had bought was even organic.


    Pammyowl... so you got this to work with pasteurized milk? If I have to buy raw milk it won't be worth it for me. It would be another thing if I had my own cow... but don't seem to have one handy.
    I seem to have trouble getting the milk to sour. I thought this one was sour but now that I cook it on the stove, no sour taste and NO curds. Grr... I guess I will be making some ice cream with the milk instead.

    Oh, no! Yes, I used milk right off the grocery shelf and it worked perfectly. Hmmm, I wonder what went wrong.

    Up to the last month I've had a "golden spoon" so to speak. I always tweak recipes and they end up better... or at least edible. Lately I've been just striking out. I don't get it... maybe God is trying to teach me humility or something! In this case, its no ones fault. I appreciate the recommendation.

    The only thing I can think of is that the lemons were really large and not as sour as you would expect so maybe they were low acid.

    So you are having a streak of bad luck, huh? That blows! Been there icon_smile.gif Did you keep track of the temp? If it gets over 122 F. it won't work.

    I don't think I went over but was I supposed to hover there for a while? I thought that it would just magically happen once I got close. I did get a few flakes of curds so maybe I was supposed to let it set at that temp longer?
