Besides mixing it with tahini which I found in a Turkish recipe for dipping bread what else is this syrup used for?

I don't know in the middle east, but Greece uses it as sweetener - on pastry or dairy desserts, for example. Basic syrup stuff.

As a replacement for jam/jelly, in salad dressings,
as a marinade for chicken/beef, desserts/baking, etc.

grape molasses and you'll find many recipes.
I posted this recipe in which grape molasses is used as a salad dressing ingredient, for example:
