I made and reviewed,
Spinach Mushroom Rice Bake Oman Style #492958 by Dienia B. which btw is not in the cookbook. It doesn't seem authentic though.
Interestingly a spinach recipe again...
It's acceptably close. It calls for ajwain but Dee put in thyme with ajwain as a sub. *I* would like to see more recipes using this spice since i have some!
they said it was stronger than thyme is that your take ?
Cook's Thesaurus: "ajwain = ajwain seed = carom seed = bishop's weed = ajowan = ajowan seed = ajwon = ajwan Pronunciation: AHJ-a-wahn Notes: These look like small caraway seeds, but they taste like a pungent version of thyme. Indian cooks like to sprinkle them on breads. Look for them in Indian markets. Substitutes: dried thyme (use more) OR cumin OR caraway."
I went & dug mine out from under the fenugreek seeds...it looks like itty bitty aniseeds. it smells very vaguely like thyme. then I took a taste - POW! Those wee seeds pack a punch that reminded me of cumin. I can't say how it compares to caraway because I don't like the stuff.
