    Menu for Week of December 29 through January 4, 2013!!!

    Hey Everyone...Happy New Year!

    It's been a while since I've posted, but starting to work full time after being a SAHM for 12 years has been an adjustment...to put it mildly LOL! I still have this week off (school schedule) so:

    My cooking plan for the week:

    Today (Wednesday). Making Vegetable Pancakes with a green salad for dinner. Also making (for the freezer), 4 lbs ground turkey worth of meatballs and 9 cups of gravy to go with them. Also making as many burritos (for the freezer) as I can using 1 lb of ground turkey, cheese and refried beans. Will also freeze small amounts of enchilada sauce (canned) to pair with some of those burritos.

    Thursday: For dinner, spanikopita and making for the freezer, 2 batches of the meat for Thai Beef Pitas and 2 batches (which gives us 4 meals) of Hot Tamale Balls.

    Friday: Take 'n' bake. We haven't done this for awhile.

    Saturday: I work, so it's up to DH

    Sunday: Who knows!

    Next week (back to work, afternoon soccer and tae kwon do for the kiddos):

    Monday: Meatballs and gravy (from the freezer), white rice and a green veggie (probably roasted broccoli).

    Tuesday: Pasta with cheese and red sauce, green salad.

    Wednesday: Thai Beef Pitas (from the freezer) served with pita or lettuce leaves, white rice and crudite plate (using ranch dressing made from Penzey's spice mix).

    Thursday: leftovers

    Friday: DH and DDs off for the weekend for older DD's soccer tournament. I work Saturday, so I'll be home by myself!!!!

    Welcome!!!!! I went back to work after 17 years at home. Such an adjustment!! Your menu looks great!

    Hey all,

    Thought I'd let you know that I got my mini oamc session done yesterday. Check out my post in the Oamc/budget forum. I costed all the meals out and was surprised how cheaply I was able to make some of the meals.
