Easy Chicken Enchilada Casserole by me

Well as we near the end of the month I would like to thank Chef shapeweave for more than just being a great guest host, but also for being a wonderful inspiration when it comes to making yesterday’s leftover meal into today’s new and very creative meal that has everyone running to the table to both see and enjoy what she has come up with.
