    Wetzel Wafers-SQuare Wafers-very thin???

    I have a recipe given to me 20 years ago....delicious!! My friend has passed away. I bought the wafers in a german deli. I make 7 layers and put the ingreds on each wafer. Then put Heavy weights for 2 or 3 days. Then cut in squares or small triangles.

    Problem.....they didnt stick well in layers....here is the ingreds.

    1/2 lb.butter, melted.......8 oz. bakers choc. or chips.....2 yolks.....4 oz. chopped nuts....1 tbl. rum.... ......
    add chips to melted butter and add rest of ingreds...mix with mixer. Make 7 layers and weight down for 2-3 days.

    Even though the layers didnt stick well. they were very, very good.

    Could it be 8 oz. of chips could mean 1 1/4 chips and not 8 oz. chips in a cup??? When i went to mix with mixer, it was already sooo thin because of the melted butter-2 sticks.

    Please help , this recipe is so very good...thanks

    I am sure it meant weight - the dry measure cup is not 8 ounces - a cup of flour, for example, is about 4 ounces. The liquid measure cup, where 8 ounces is 1 cup, is not meant for dry ingredients.

    A cup of chocolate chips weighs 6 ounces. So you should use 1 1/3 cup of chocolate chips to equal 8 ounces.

    Thanks for the reply.....so there was a mistake with the chips...i used 1 cup of chips.....do u think that is why the wafers wouldnt stick to one another......I love the recipe very much. Even though they barely stuck they still tasted excellent.....i weighted them down for 2 days......it was hard to find the wafers....they are very flat and thin....should it be 1/3 cup extra or 1/4 cup. Also do u think that would have made the difference why the 7 layers didnt stick..

    I would have thought they'd stick together anyway, but possibly slide around if the filling is too thin. I see these wafers at several of the large ethnic/produce type markets in my area - they are imported from Lithuania or Poland and sold in the area with Eastern European foods.

    I am wondering if this should have been a pastry cream, with the yolks beaten then softened butter (not melted) and melted but cooled chocolate added. I have a bunch of recipes fro these wafers somewhere, I will see if I can find them. They are very popular in Lithuanian cooking.

    Have not found the document I am thinking of but here is one recipe

    This is for ten wafers, not sure how large

    Beat 2 egg yolks with 100 g sugar, 2 tbl flour and 50 ml milk. Heat 450 ml milk until it's hot - don't boil - then pour the milk slowly into the egg mix while it is beating. Remove from the heat and beat in 100 g softened butter and the zest of 1/2 an orange or so.

    Thanks for replies but they definitely had chocolate.....they are made in Germany.....the box says Wetzel Tortenboden wafers.

    Amazon sells them on their site for 9.99 They are delicious...

    200 g dark chocolate
    150 g room temperature butter
    70 g powdered sugar
    2 tsp vanilla sugar
    1 tsp instant coffee crystals
    10 wafers,

    Melt the chocolate over hot water. Let it cool somewhat, then beat in the softened butter, piece by piece, powdered sugar, vanilla sugar and coffee. Beat everything in a mixer for about 5 minutes.

    Thank you sooo soooo much for all your kindness in finding the recipe....yes, it looks exactly like that except maybe a little thinner wafers......would you be soo kind as to change the first three ingredients to cups....or lbs....I would appreciate it. That is the closet I have gotten to a picture of what I am looking for.l
