    Christmas Already ... WOW
    I hope everyone is ready! ... Just me and my son for xmas eve, but have lots of other things going on, so I haven't been cooking much; stuff on hand, soups, freezer stash, etc.; quick and easy. I had my work party last week which went well; and this Sat, my poker buddies party - lots of finger food/appies. I also have a 'helper,' which helps. Otherwise, a pretty easy week, and not planning much.

    Party with poker buddies - Casual drinks and nibbles, nothing fancy

    Dinner with my son (his request): Herb, garlic marinated (my own mix), grilled pork tenderloin; classic caesar salad; fresh rolls (abm); http://www.food.com/recipe/roasted-rosemary-potatoes-with-garlic-59917, but I dice mine rather than halves - my fave cheese spread w/my slight twist http://www.food.com/recipe/chipped-beef-cheese-ball-24430, crackers; and, my own cold smoked salmon for my son; beer for him, special egg nog for me (bourbon spiked)

    Dinner (just me): A cornish hen stuffed w/leftover T-day stuffing - but, added cranberries/walnuts; roasted brussels with balsamic and honey; garden salad with a warm bacon vinaigrette

    Me and my friend from GA: Beef stroganoff over buttered noodles (1 pan recipe, TBD); peas; and a garden salad; also ... plenty of wine

    Hi all,

    Great-looking celebration menus!

    SC---your squash and goat cheese recipe sounds like an intriguing juxtaposition of flavors.

    Here we go:

    Sat – Moroccan Spiced Chicken with Almonds and Dates with bulgur and green beans (the chicken really is good! This carried over from last week because we ended up going to friends' one night for a big pot of chili.)

    Sun – clammy pasta with broccoli -- something easy because I've been busy with other stuff, although I think I am going to experiment with some egg yolk for a sauce as in carbonara

    Mon – special fam dinner for xmas eve, which is the inlaws main celebration. A communal effort, we are having beef tenderloin along the lines of this:

    with herby roasted potatoes similar to the ones already mentioned upthread, and brussels sprouts of some sort. For dessert SIL is surprising us.

    Tue – Sarasota's Speedy Chicken Cacciatore Soup with bread, unless there is a miracle and there are leftovers from Monday!

    Wed –fish/greens with polenta cubes

    Thu – variation on Baja Black Beans, Corn and Rice, a warm version with cooked greens added

    Fri – A Simple Chicken Satay with brown rice (leftover) and a frozen green veg

    I need to get an early start tomorrow to do my weekly grocery shopping and avoid last-minute holiday shoppers!
