So I've just tried my fruitcake that i made in late november and its not done in the center. I've been having trouble with my new stove, turns out the heat sensor wasn't working properly. Is there anything that I can do to try to cook it more?

Honestly, i don't think so. I would be concerned that the uncooked center may have started to mold. I would toss it.

Ditto that. Also, pick up a cheap oven thermometer, even a new oven can be out of calibration, and if it's under warrantee they should fix it.
