    How long can I refrigerate pancake batter usually?

    I always run into the same problem every weekend, make too much batter. Im afraid to store it to long because I really just dont know the shelf-life of batter in the fridge. I use the typical ingredients: all-purpous flour, baking powder, eggs, milk, butter, sugar, pitch of salt and vanilla extract. Any recommendations?

    I don't like to keep the extra batter, it seems to "go flat" producing thin, tough pancakes.
    I would either cut the recipe so you do not have leftover batter, or make all the pancakes, and when the leftover pancakes have cooled, I would wrap them tightly and freeze them for use at another time.
