    Here is this answer for you:

    There are a few other options:
    Pancetta but only for a cooked dish. Other suggestions would be an lean ham. Serrano or Black Forest would be your best choices. If you can't find those then I would go with a Canadian bacon.

    If you use regular bacon make sure you blanch it first in boiling water for a few minutes, then rinse and drain.

    As stated above, one would need to know the recipe or how you are going to use it to suggest a proper substitute.
    Being Italian, I personally think Canadian bacon is a very poor substitute, as it does not have the texture, or saltiness of prosciutto. (Canadian bacon can also have a smoky flavor that prosciutto does not have - prosciutto is salt cured and dried, it is not smoked .)
    I would stick with Serrano ham as a substitute.
