    Stuffing with leftover turkey bits in the dressing

    When I was in college, my roommate came back from Thanksgiving break with some something that resembled a homemade version of stuffing with tiny bits of turkey mixed in. We ate it cold though I'm assuming it was intended to be eaten hot. It was the best stuffing I've ever had and I've always wanted to recreate it.

    All I remember about it was that it was a bread stuffing and that my roommate said that all of the tiny bits of turkey that ended up on the pan when it was being carved got added to the recipe.

    Has anyone ever had anything like this? Any suggestions on how to do this?

    I always do that. But, I think you can just use your favorite recipe. I always made 1 pan outside the bird and also stuffing in the bird as my Dad loved that. I made extra because I loved to freeze some for later meals.

    I made sure before making the gravy to take any bits or even after carving the bird, after dinner to save little bits and add to some of the leftover dressing. I would usually serve that with gravy and just a salad one night. The turkey gave the stuffing lots of flavor.

    My stuffing is similar to this as far as ingredients; but I use a mix of breads, and stuffing mix; more seasoning; I also add a little milk and an egg. But after it bakes, I would add the leftover turkey and it was delish.

    This is another easy and good idea:

    TURKEY AND STUFFING CAKES - or patties -
    Recipe from chef Gary Danko, San Francisco.
    Use leftover stuffing and shredded turkey to make patties. Stir in 1 beaten egg, shape into patties and fry on both sides in olive oil. Serve with turkey gravy.
