Hello my menu peeps!!!!!!
It's a gorgeous post rainy day today. Crisp and cool. Drinking my coffee and planning my menu before I go off to work!
Tonight I'm taking my DH to see the Moody Blues - tickets I got him for his bday. He's very excited. We're going out to dinner - haven't done that in forever cuz he's been out of work, but I've been squirreling some money away for tonight.
Is anyone completely ready for Christmas? I'm not. Maybe a little less than half way there.  I hope to put a good dent in it this weekend though.
I survived the week of parties. The cheese balls and other appies were a big hit at the office Christmas party. I didn't take pictures, but others did. I'll share when they send them to me.
Anywho, here's my menu. Share yours!!!
Saturday - Ziti Pepperoni Casserole (pepperoni in the freezer) with salad
Sunday - Perfect Rump Roast (rump roast on sale) with potatoes, carrots, onions and bread
Monday - Posole (Crockpot) using pork in freezer, with rice and beans
Tuesday - Creamy Garlic Penne Pasta adding chicken and roasted red peppers, with salad
Wednesday - breakfast for dinner (my DH's least favorite meal  )
Thursday - burritos of some sort
Friday - leftovers or stretch!

Friday: Blackened Catfish, salad -- obviously cutting down on the amount of butter
Saturday: split pea soup
Sunday: Weeknight Ravioli Bake
Monday: Crock Pot Chile Verde
Tuesday: out with friends
Wednesday: Oriental Flank Steak with Asparagus and Wild Rice Pilaf
Thursday: hotdogs and chips
Friday: fish/salad

Have my work party tomorrow, Sat. I'm hosting for my boss whose house is being built; but he is paying, and I have help cooking. So, it really isn't too bad. The week could easily change as I have a lot going on - as did last week; but I have a plan, and stuff on hand. Just going to wing it. No recipes this week ... probably going to just use old ones on file as I need things that are easy and I know and easy to make. Now, is not the time to try new things.

Monday: Easy Chicken Soft Tacos, salad, chips and hot sauce
Tuesday: Smothered Meatballs over noodles, steamed green beans and salad
Wednesday: Bandito Chili Dogs, salad, and White Texas Sheet Cake
Thursday: Skillet Hopping John, steamed broccoli, steamed carrots, and salad
Friday: Out of town game; eat out after
Work Lunches: Senate Bean Soup w/ cornbread muffins and Chile Con Queso w/ chips
Breakfast: scrambled eggs and Cheesy Bacon and Ham Casserole
Snacks/Christmas goodies: Spicy Cashews, Incredible Chocolate Fudge, and Granny's Gingersnaps

Charmie, I hope you both have a wonderful celebration! You deserve it.
Last week for our camera club potluck I was just going to buy something but ended up roasting cubed butternut squash with garlic and onion powders, cumin, chipotle chili powder, and S+P and olive oil. I love the smoky spicy combination with the warmth and sweetness of the squash. People even asked for the "recipe" and it was almost embarassing how simple it was. I was glad I'd made the effort.
No parties so far this week; as with SC, just keeping things simple to keep from getting stressful. Unfortunately I have to hold off on making the gozlemes for a few more months because I am having to stay dairy-free while breastfeeding. I know there are dairy-free "yogurts" but in this recipe I suspect that the protein content of the yogurt is significant, so I think it would be too risky to sub. But I hope to try them soon.
Sat – pasta w/jarred tomato sauce (has been on sale very cheap) and frozen fish and broccoli
Sun – leftovers from Friday (Mexican tamale casserole type thing)
Mon – chicken with tomatoes and peppers and olives, with nice bread
Tue – tree trimming + dinner at inlaws, I think we will bring lemon squares using an old family recipe -- not a usual Christmas thing but DH (who VERY occasionally cooks although he always does weekend eggs for us because his are so much better than mine) has the urge to make them; I'm not going to stand in the way of that!
Wed – North African Meatballs with carrots and polenta
Thu – Baklava Salmon (Salmon With Honey, Butter, Walnuts, and Mustard) with broccoli and rice
Fri – Moroccan Spiced Chicken with Almonds and Dates with bulgur and green beans
I am also thinking of the families in CT. The pain of losing a child is something no one should have to bear; the devastation in that community is unfathomable.
