    Dinner for One...need chicken recipe for a non-beef eater!

    Thanks in advance..I am preparing a standing rib roast for Christmas dinner but we have one guest who does not eat beef...thought I would cook one or two boneless chicken breasts for her but what could I do with it? Next to that gorgeous roast, that pitiful chicken breast would look sort of sad! Any ideas? I am not sure she likes anything too fancy but I will try anything.... any help is greatly appreciated!!

    I really like this recipe and the glaze would make it look festive. Easy to cut the recipe in half, one breast would be a bit lonely on that platter, Raspberry Balsamic Chicken
