    CALLING FUDGE MAKERS....HELP!

    I make the old fashioned boiled sugar fudge, as my grandmother did, without any marshmallow fluff/creme. I make hundreds of pounds of this fudge for Christmas and have an emergency question from experienced fudge/candy makers who have done this.

    I always used to beat with a wooden spoon until matte. The nerve damage in my hands simply will not allow me to do this any longer. Can I do the beating in my stand mixer with the paddle attachment? Tell me everything that you know about it please!

    Never using my wooden spoon again makes me sad

    but fudge goes on!
