Easy pot roast dinner

This is such an easy roast. Beef, V8, beef broth, dried seasoning (fresh is always good if you have it), bay leaf, 1 onion diced, and 10 whole small red potatoes. Oh yeah,s/p. Add to a crock, cover and cook on high 6-7 hours. Remove thicken sauce with flour and strain. Devour. So delicious, and so easy.
OK, I did add a little splash of worcestershire; but not necessary, just extra goodness and NO work.

And leftover gravy, good on baked spuds vs butter/sour cream. Good on roasted potatoes in the am with eggs; perfect over hash. And fantastic over grilled burger patties with onion slices. It freezes great!!

Odd coloring on the first photo for some reason; it was 8pm and no light. The salad was just my greens, onions, and maters from my garden. So fresh, I love them.
They are in tins because I am heading to my son tomorrows to drop off some leftovers. One of his favorite meals.

Oh, lovely. I do SO love dinners which are no work, and yet come out so delicious!! But 6 - 7 hours at HIGH heat? Or is it a slow cooker?
I'm a bit thick there, I know, because I don't have a slow cooker.

I think it is pot roast month JV. So many have been making it. Tis the season ... cold, rainy, snow (well not here, we just pretend). But good comfort food now matter what the weather is.
Also, for me, good football food. I needed comfort after the bucs lost, lol

V8 is so good. just 2 cups, 1 cup broth, some seasoning, the onion I dice and whole spuds. HOW easy ... right?
The V8 is so good in many dishes. I use it in chili, meatloaf, soups, etc.
