I need advice on honey frosted mint leaves.

Hi,

I'm growing several different cultivars of mint in my backyard. I want to dip some of the leaves in lemon juice, then honey, then dry in my food dehydrator.

However, the honey won't dry, not even after days in the dehydrator. I feel that I need to mix it with water over heat, then dip the mint and dry. But, I could use some advice; I want to "frost" dried mint leaves without wasting honey to figure it out.

I know that most people use egg whites and sugar. But, I want to try honey. After all, someone figured it out with those banana chips...

Has anyone else tried this?

I have not tried this, but I buy dehydrated honey at the Asian market and I am wondering if using that instead of sugar might get you the flavor you desire. I like the honey crystals to take to work, less messy than liquid honey.

Thanks, but I've got two hives full of honey. I want to use it instead of buying more. I wonder how they dehydrate the honey into crystals...

Your own hives, how exciting!

I imagine the honey might need to be thinned down quite a bit to create a very thin glaze.

Duonyte: Yes! But, I don't want to waste honey trying to find out the correct percentage to dilute with water before coating the leaves and drying. I was hoping to find someone with experience to advise me. It's much smarter to learn from the experience of others.
