    Newbie "Fry Cook" Poster
    I have found some recipes that called for powdered milk. Is there a good exchange for it.
    I have a food processor with a dough attachment . Can I use that in place of a bread maker.

    You can use liquid milk instead of water. According to King Arthur flour, powdered milk will make the bread softer and more tender, and it will stay fresher longer.
    You can mix the bread with your dough blade, then finish the kneading by hand. Finishing by hand is a good idea, as the dough can go from perfectly to over-worked within a minute or so, and that can't be fixed.

    The food processor has a tendency to heat up the dough - sometimes to the point of killing the yeast. So the rest periods are important - buzz briefly then stop. Do the minimum amount you need to get the dough more or less formed. Finishing by hand, as Zeldaz noted, is a good idea.

    While the plastic "dough blade" doesn't heat up the dough as much, it also does a lousy job of mixing and kneading the dough. When I make bread dough in my food processor, I freeze the metal blade and bowl before starting to get them very cold, then run the machine in 15-second pulses, resting 5-10 seconds between, until the dough comes together. Then I turn it out and finish kneading by hand.
