Hi my menu friends!!! How is everyone faring? Christmas shopping done?  I'm not even close!
I'll be back with my completed menu, but please share yours if it's ready!

Ok, I'm back. My DH is still looking for work, so more lean meals. I don't mind, but he's used to fancier meals...poor baby
My eldest DS is turning 21 this week! Yipes!!! I'm not old enough!!!! So he's got his all-request meal.
And the Christmas season of parties has begun! Had one Thursday night for Bunco. Fun times! I have 2 more this coming week. I'm helping with the appetizers for the office party, but they are covering the expenses.
So here's my menu:
Saturday - my department party. I'm bringing the vegies. I'm thinking of one or both of Caramelized Butternut Squash and Holiday Beans With Cranberries
Sunday - Grilled Bratwursts and Hotdogs from freezer. Whatever sides sound good.
Monday - Charmie's Potato Cheese Soup with salad and rolls
Tuesday - Skillet Chicken, Stuffing and Gravy using leftover gravy in freezer and stuffing I bought on sale at Thanksgiving. Served with mashed potatoes and vegies
Wednesday - All Staff Christmas party - I'm making Green Chili Cheese Ball shaped like a snowman, Pineapple Cheese Ball shaped like a Candy Cane, and a family recipe cheese ball shaped into pinecones, Spinach Dip Pinwheels using green tortillas and stacked into a Christmas Tree.
For dinner, Hamburger Diane with potatoes and vegies and salad
Thursday - My DS's bday dinner! Grilled Porkchops from SeriousEats.com, mashed potatoes, corn and Honey Bun Cake
Friday - leaving open for stretch!

Sorry to hear about your husband looking for a job - hope he finds something soon.
It's a busy week so we are making good use of the crockpot and with colds and flu season upon us - soup for much of the week.
Friday: Smoky Tomato-Salmon Chowder
Saturday: potluck party at lunchtime :bringing Asian Slaw With Red Pears
dinner: Cabbage Soup With Rice and Dill for the Crock Pot
Sunday: Diabetic Best Ever Low-Fat Baked Chicken and veggies
Monday: Slow Cooker Split Pea Soup
Tuesday: potluck lucK: bringing Cranberry Muffins
dinner: out with friends
Wednesday: Posole (Crockpot)
Thursday: Creamy, Light Macaroni and Cheese
Friday: fish/salad

C - sorry to hear about DH, especially around the holidays. I can't believe it is already the second week of Dec. Where has time gone. I'm really trying to use what I have on hand; with 1 new dish each week. Also, trying to build up my freezer stash of meatballs, some prepared meats and chicken, etc.
Christmas decor done, tree up, every thing mailed and cards out. Two Xmas parties, nothing too special or fancy and the dates have already changed twice  Otherwise, I would love if it was a bit cooler. 80 is NOT December, very warm this year. HO HO HO. Happy shopping!

Morning  Have a busy cooking week ahead to get ready for Christmas. Weather can't decide what it wants to do, 30s-70s back and forth. Good news--shopping is done and presents are wrapped.
Here is the plan Mon-Fri
Monday: Outstanding Shrimp Casserole, steamed carrots and salad
Tuesday: BB game night-- Chili Cheese Fries and salad
Wednesday: BBQ Chicken Sandwiches, salad, dill pickle spears
Thursday: Blackened Catfish, steamed broccoli, baked sweet potato, and Texas Pecan Pie
Friday: BB game night--Eat Out--Drive around looking at Christmas lights--end the night w/ Tennessee Hot Chocolate
Work Lunches: Black-Eyed Pea Chowder w/ Onion Herb Bread (Bread Machine) and Cold Macaroni Tuna Salad
Breakfast: Potato-Apple-Ham Skillet
Snacks/Christmas: Cappuccino Mix and Deluxe Spiced Tea Mix (to give as gifts); Pralines and Granny's Tea Cakes (for family cookie tray)
Drop off dinner for friends (newly diagnosed w/ NHL): Mermaid's Tender Roast Chicken, Nannys Broccoli Rice Casserole, baked potatoes and salad
