    Does anyone have a recipe for cookies made with veg oil but no butter or margarine? I think the original recipe was made with corn oil. They were simple vanilla flavoured but very, very good.

    Olive oil nutmeg cookies


    ¾ cup caster sugar
    ¼ cup olive oil
    1 egg
    1 egg yolk
    1 tsp vanilla extract
    ²⁄³ cup self-raising flour
    1 cup plain flour
    1 tsp freshly grated or ground nutmeg
    Brown M&M’s or Smarties



    Preheat oven to 180°C. Line 2 oven trays with baking paper. Put caster sugar, oil, egg, egg yolk and vanilla extract in the small bowl of an electric mixer and beat for 2 minutes until thickened.

    Transfer mixture to a large bowl. Sift both flours over and add nutmeg. Mix with a wooden spoon until well combined.

    Roll tablespoons of mixture into balls and put onto trays. Flatten balls with your fingertips and press 1-3 M&M’s onto each biscuit.

    Bake for 12-15 minutes until lightly golden. Allow to cool on tray for 5 minutes, then transfer to a wire rack to cool.

    Notes
    Olive oil contains mono-unsaturated fats, unlike the unhealthy saturated fats of butter. For this reason, desserts made with olive oil are automatically healthier, and most also contain less fat overall.

    * I use this recipe, but I'm sure replacing the EVOO with veg oil would work fine.

    Thank you. It isn't quite the same as the one I had in mind but it sure looks good. I'm going to try it.

    This recipe sounds like what you are looking for (vegetable oil sugar cookie):

    Grandma's Soft Sugar Cookies

    2 large eggs
    2/3 cup vegetable oil
    2 teaspoons vanilla
    3/4 cup white sugar
    2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon salt

    Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.

    Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.

    Flatten with bottom of glass moistened with water and dipped in sugar.

    Bake at 400°F for 6-10 minutes or just until lightly golden

    That's very close. I remember a mix of white and yellow or brown sugar, maybe that was just my mom's adaptation. The cookies were delightful!
