    Soup and Salad Dinner

    This was dinner the other night.

    The soup was one of the "Best Thing I Ever Made, lol." It was a mix a frozen butter nut squash (the bag from the grocery store); some ancorn squash I had baked with brown sugar, cinnamon, nutmeg, and butter. Some leftover mashed spuds from Thanksgiving; chives from my garden I dried and fresh sage; turkey stock from my turkey bones; a little brandy; and finished with just a touch of cream. I wish I would of had more leftovers to use. It made 3 bowls.

    The salad, nothing special; but red leaf lettuce, my first leek, baby cucs, and tomatoes from the garden. Also, mushrooms from a local farm who grows them ... so much better than store bought.

    I can almost taste it between the photo and your wonderful description. I never would have thought a touch of brandy but bet it was really good after all some red wine in stew is delightful.

    Now I am with Steve can I please have a bowl icon_biggrin.gif

    Soup and salad -- such a supremely healthy combo! That soup looks incredible -- I'd love to take a plate, and go sit in a chair in a quiet corner and simply enjoy it ... ! icon_lol.gif

    Thx Shapes; it was right up your alley. LEFTOVERS. You are of course, the Queen of leftovers. A little of everything. Like I said ... I wish I wrote down all the measurements - not to sweet, but just enough.
