    I'm concerned that there are eggs in this recipe yet you don't cook it?

    Yes, thats correct. Obviously it is an old recipe, from when raw eggs were commonly used in desserts and other dishes.
    If the use of raw eggs is a concern for you , you can use an egg substitute or pasteurized egg product like Egg Beaters in place of fresh eggs, or you can use pasteurized in shell fresh eggs.
