Wow...some great looking meals this week. SC hope you're feeling better. Me...just crazed as usual. BUT big changes coming up. After being a SAHM for 13+ years I am returning to the workforce full time so my menu planning is going to have to take a turn for the pre-prepared. DH and I are planning a cooking session this Sunday to feed the freezer. For this week, though.
Yesterday: Smoked sausage, cornbread from a box and carrots and ranch.
Today: Spanikopita and crudite. When tomatoes aren't in season, coming up with a side for Spanikopita is always a tough one for me..Any ideas out there?
Wednesday:
Refried Bean Chili, tortilla chips and a green salad.
Thursday: Re-trying a dump chicken recipe using cranberry sauce, BBQ sauce, onions and chicken which you serve over rice. If the family likes it we will make up a couple dinners worth this weekend to put in the freezer.
Friday: As usual, take 'n' bake.
Saturday: Still working the weekend job, so I'll be busy 6 out of 7 from this point on!
Sunday: Going to try and feed the freezer with meatballs, gravy, taco meat, green chili chicken, maybe cranberry-BBQ chicken, grilled chicken chopped and sliced.

I did that 4 years ago. Returned to the workforce after 17 years! Really changed my menus/cooking. I yearn sometimes for the time to fix lengthy meals, but they have to wait for the busy weekends.
